Ingredients
  

For the Filling
  • 8 oz Cream Cheese softened to room temperature
  • 2 tbsp Keto Sweetener Swerve or monk fruit blend
  • 1 tsp Vanilla Extract
For the Coating
  • 2 tbsp Keto Sweetener granulated
  • 1 tbsp Ground Cinnamon
  • 2 tbsp Melted Butter
For the Assembly
  • 12 Low Carb Tortillas high fiber

Method
 

Prepare the Filling
  1. In a small glass bowl, combine the softened cream cheese with the keto sweetener and vanilla extract. Use a fork to mash until smooth.
Prepare the Coating
  1. In a separate shallow dish, mix the granulated keto sweetener with the ground cinnamon.
Assemble the Roll Ups
  1. Lay a low carb tortilla flat on a cutting board. Spread the cream cheese mixture evenly across the surface.
  2. Roll the tortilla tightly into a log. Slice the ends off for a neat look.
  3. Brush the entire outside of the roll with melted butter.
  4. Roll the buttered tortilla in the cinnamon sweetener mixture until fully coated.
Cook the Roll Ups
  1. Place the roll ups in an air fryer at 350 degrees for 5-7 minutes, or until crispy.
  2. Alternatively, cook in a hot skillet over medium heat, rotating frequently until crispy.
Serve
  1. Let the roll ups rest for a minute. Slice into bite-sized pieces and serve.
