Ingredients
  

Main Ingredients

  • 1 lb ground turkey lean (93% or higher)
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup long-grain rice
  • 2 cups chicken broth or vegetable broth
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper adjust to taste

Optional Additions

  • diced bell peppers red, green, or yellow
  • zucchini diced
  • carrots diced
  • fresh herbs such as parsley or cilantro, chopped

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and cook for about 5 minutes until softened. Stir in minced garlic and cook for another minute.
  • Add ground turkey and cook until browned, breaking it apart with a spoon.
  • Stir in rice, broth, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
  • Remove from heat and let sit, covered, for 5 minutes. Fluff rice with a fork.
  • Garnish with fresh herbs and serve warm.

Notes

Customize this dish with different vegetables and seasonings to fit your taste. Great for meal prep and can be stored in the fridge for up to 4 days!
