Prepare the Special Sauce
- In a small bowl, whisk together all the special sauce ingredients: mayonnaise (or Greek yogurt), ketchup, relish, vinegar, mustard, paprika, and garlic powder. Taste and adjust for tang or sweetness. Cover and chill in the refrigerator while you cook the beef.
- Heat a large skillet over medium-high heat. Add the minced yellow onion and cook until softened and translucent, about 3 to 4 minutes.
- Add the ground beef to the skillet. Break it up with a wooden spoon. Cook until it is completely browned and no pink remains, about 6 to 8 minutes. Drain off any excess grease.
- Stir in the salt, black pepper, garlic powder, smoked paprika, and Worcestershire sauce. Cook for another 2 minutes to infuse the flavors. Remove from heat.
Assemble the Bowls
- Divide the chopped Romaine lettuce among 4 serving bowls as the base.
- Top each bowl with a hearty serving of the hot, seasoned ground beef.
- Add diced tomatoes, chopped pickles, sliced red onions (if using), and shredded cheddar cheese.
- Drizzle generously with the chilled special sauce. Serve immediately.
