Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons minced garlic
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes optional, for a little heat
  • 2 tablespoons cornstarch (mixed with 2 tablespoons cold water to make a slurry)

Instructions
 

  • Place the chicken breasts evenly in the bottom of the slow cooker.
  • In a medium bowl, whisk together honey, soy sauce (or tamari), minced garlic, rice vinegar, sesame oil, and red pepper flakes (if using) until well combined.
  • Pour the honey garlic sauce over the chicken breasts making sure they are fully covered.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded with a fork.
  • Shred the cooked chicken directly in the slow cooker using two forks, then let it sit in the sauce for 10-15 minutes to absorb more flavor.
  • Whisk together cornstarch and cold water to make a slurry, pour it into the slow cooker, stir well, and switch the slow cooker to high. Let the sauce thicken for 10-15 minutes, stirring occasionally.
  • Serve the Dump Go Honey Garlic Chicken over rice, noodles, quinoa, or preferred base. Garnish with sesame seeds and chopped green onions if desired.
