  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons minced garlic
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes optional, for a little heat
  • 2 tablespoons cornstarch (mixed with 2 tablespoons cold water to make a slurry)

Method
 

  1. Place the chicken breasts evenly in the bottom of the slow cooker.
  2. In a medium bowl, whisk together honey, soy sauce (or tamari), minced garlic, rice vinegar, sesame oil, and red pepper flakes (if using) until well combined.
  3. Pour the honey garlic sauce over the chicken breasts making sure they are fully covered.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded with a fork.
  5. Shred the cooked chicken directly in the slow cooker using two forks, then let it sit in the sauce for 10-15 minutes to absorb more flavor.
  6. Whisk together cornstarch and cold water to make a slurry, pour it into the slow cooker, stir well, and switch the slow cooker to high. Let the sauce thicken for 10-15 minutes, stirring occasionally.
  7. Serve the Dump Go Honey Garlic Chicken over rice, noodles, quinoa, or preferred base. Garnish with sesame seeds and chopped green onions if desired.
