For the Cottage Cheese Mixture
  • 1 cup cottage cheese full-fat or low-fat
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
For the Assembly
  • 4 slices bread sourdough, whole wheat, or gluten-free
  • 1/2 cup pizza sauce store-bought or homemade
  • 1/2 cup shredded mozzarella cheese or any melting cheese
  • 1 tablespoon olive oil for brushing
Optional Toppings
  • 1/4 cup cherry tomatoes sliced
  • 1/4 cup fresh spinach

Method
 

Prepare the Cottage Cheese Mixture
  1. In a small bowl, combine cottage cheese, garlic powder, paprika, black pepper, dried basil, and oregano.
  2. Stir until well mixed. Set aside.
Assemble the Toasts
  1. Place bread slices in the air fryer basket and air fry at 350°F for 2 minutes to lightly toast.
  2. Remove bread from air fryer. Spread 1-2 tablespoons of pizza sauce evenly onto each slice.
  3. Dollop the cottage cheese mixture over sauce and gently spread it across the bread.
  4. Top with shredded mozzarella and optional toppings such as sliced cherry tomatoes or fresh spinach.
Cook in Air Fryer
  1. Place the assembled toasts back in the air fryer basket in a single layer.
  2. Air fry at 375°F for 6-8 minutes, or until cheese is bubbly and edges are golden brown.
Serve
  1. Carefully remove from air fryer and let cool for a minute before serving.
  2. Garnish with extra oregano or red pepper flakes if desired.

Notes
