Ingredients
  

Ground Meat
  • 1 lb Ground Beef 80/20 blend or mix with ground turkey
Binder
  • 1/4 cup Pork Rinds finely ground, or almond flour
Moisture & Binding
  • 1 large Egg lightly beaten
  • 1 tbsp Heavy Cream or water/broth
Cheese
  • 1/4 cup Parmesan Cheese grated
Aromatics
  • 2 cloves Garlic fresh minced
  • 1 tbsp Yellow Onion finely diced
Herbs & Seasoning
  • 1 tbsp Fresh Parsley chopped
  • 1 tsp Dried Oregano or Italian seasoning
  • Salt to taste
  • Black Pepper freshly cracked, to taste
Flavor Boost
  • 1 dash Worcestershire Sauce check for added sugars if strictly keto
  • 1 pinch Smoked Paprika optional

Method
 

Prepare the Ingredients
  1. In a medium bowl, combine all the non-meat ingredients: the egg, heavy cream, pork rind crumbs (or almond flour), Parmesan cheese, garlic, onion, parsley, oregano, salt, and pepper. Mix these until they form a slightly thick, cohesive paste.
  2. Add the ground beef (and/or turkey) to the bowl. Use your clean hands to gently mix the ingredients until a cohesive mixture forms. Avoid overmixing.
  3. Use a cookie scoop or your hands to roll the mixture into 1.5-inch sized balls, about 16-18 meatballs.
Cook the Meatballs
  1. Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with olive oil spray.
  2. Place the meatballs in a single layer in the air fryer basket. Cook in batches if necessary.
  3. Cook for 12 to 15 minutes, flipping halfway through. They are done when they reach an internal temperature of 165°F and are golden brown.
  4. Remove and serve hot with your favorite low-carb sauce.

Notes

These meatballs are naturally gluten-free. For meal prep, store in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the air fryer at 350°F for 4-6 minutes. If the mixture is too loose, add more binder; if too dry, add a little oil or cream.
