Prepare the Ingredients
- In a medium bowl, combine all the non-meat ingredients: the egg, heavy cream, pork rind crumbs (or almond flour), Parmesan cheese, garlic, onion, parsley, oregano, salt, and pepper. Mix these until they form a slightly thick, cohesive paste.
- Add the ground beef (and/or turkey) to the bowl. Use your clean hands to gently mix the ingredients until a cohesive mixture forms. Avoid overmixing.
- Use a cookie scoop or your hands to roll the mixture into 1.5-inch sized balls, about 16-18 meatballs.
Cook the Meatballs
- Preheat your air fryer to 375°F (190°C). Lightly grease the air fryer basket with olive oil spray.
- Place the meatballs in a single layer in the air fryer basket. Cook in batches if necessary.
- Cook for 12 to 15 minutes, flipping halfway through. They are done when they reach an internal temperature of 165°F and are golden brown.
- Remove and serve hot with your favorite low-carb sauce.

Notes
These meatballs are naturally gluten-free. For meal prep, store in the fridge for up to 4 days or freeze for up to 3 months. Reheat in the air fryer at 350°F for 4-6 minutes. If the mixture is too loose, add more binder; if too dry, add a little oil or cream.
