- Start by slicing your bell peppers and onion into thin strips. Place them in the bottom of your crockpot.
- In a small bowl, mix the chili powder, cumin, smoked paprika, salt, and pepper. Rub this spice blend all over the chicken breasts. Let it sit for 10 minutes to absorb the flavors.
- Place the seasoned chicken breasts on top of the vegetables. Pour the chicken broth around the edges, being careful not to wash off the spices. Drizzle with olive oil.
- Cover and cook on low for 5 to 6 hours or on high for 2.5 to 3 hours. The chicken should be tender enough to shred easily with a fork.
- Remove the chicken to a cutting board. Use two forks to shred it into bite-sized pieces. Return the shredded chicken to the crockpot and stir everything together.
- Squeeze the fresh lime juice over the top and stir. Let it sit for 5 minutes so the acidity brightens the dish.
- Warm your tortillas in a dry skillet or directly over a gas flame for a few seconds per side. Pile the fajita mixture onto the tortillas and add your favorite toppings.
