Ingredients
  

  • 2 lbs boneless, skinless chicken breasts can substitute with chicken thighs for richer flavor
  • 24 oz jar marinara sauce
  • 15 oz can diced tomatoes undrained
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup shredded mozzarella cheese or any cheese you like
  • cooked pasta for serving, any shape you prefer
  • fresh basil optional, for garnish

Method
 

  1. Lightly grease your crockpot with cooking spray (this makes cleanup even easier!).
  2. Place the chicken breasts in the bottom of the crockpot in a single layer. No need to cut the chicken.
  3. Pour the marinara sauce and diced tomatoes over the chicken. Add the chopped onion and minced garlic.
  4. Sprinkle the Italian seasoning, salt, and black pepper over everything.
  5. Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until chicken is cooked through and shreds easily with a fork.
  6. Use two forks to shred the chicken directly in the crockpot.
  7. Sprinkle mozzarella cheese over the shredded chicken and let it melt for a few minutes.
  8. Serve the chicken over your favorite cooked pasta and garnish with fresh basil if desired.
