Cook the Protein and Grains
- Cook the chicken breast in salted water with a bay leaf for 15 minutes. Let it cool slightly.
- Cook the quinoa with 2 cups of water, simmering for 15 minutes. Let it cool slightly.
- Roast the sweet potato cubes with olive oil at 400°F for 20 minutes. Let it cool slightly.
Prepare the Containers
- Grab freezer-safe bowls or mason jars. Label them with the date and contents.
Layer the Ingredients
- Layer the quinoa, chicken, black beans, sweet potato, and spinach in the bowls.
- Add a dollop of Greek yogurt on top of each bowl.
- Sprinkle with nutritional yeast, cumin, smoked paprika, salt, and pepper.
Seal and Freeze
- Seal the bowls and place them in a single layer on a baking sheet. Freeze for 2 hours until solid. Then stack them in the freezer.
Reheat and Serve
- When ready to eat, remove a bowl from the freezer. Vent the lid and microwave on high for 2 minutes, stir, then heat for another 1-2 minutes until steaming.
