Easy High Protein Freezer Friendly Bowls

A quick and easy high-protein meal prep recipe that can be frozen and reheated, perfect for busy weeknights.

Ingredients
  

Protein Base
  • 2 cups cooked chicken breast shredded
Grain
  • 2 cups cooked quinoa
Legumes
  • 1 can black beans rinsed and drained
Veggies
  • 1 cup sweet potato cubed and roasted
  • 1 cup spinach
  • 1/2 cup bell peppers diced
Creamy Element
  • 1/2 cup Greek yogurt plain, full fat or 2%
Flavor Boosters
  • 2 tablespoons nutritional yeast
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • salt and pepper to taste

Method
 

Cook the Protein and Grains
  1. Cook the chicken breast in salted water with a bay leaf for 15 minutes. Let it cool slightly.
  2. Cook the quinoa with 2 cups of water, simmering for 15 minutes. Let it cool slightly.
  3. Roast the sweet potato cubes with olive oil at 400°F for 20 minutes. Let it cool slightly.
Prepare the Containers
  1. Grab freezer-safe bowls or mason jars. Label them with the date and contents.
Layer the Ingredients
  1. Layer the quinoa, chicken, black beans, sweet potato, and spinach in the bowls.
  2. Add a dollop of Greek yogurt on top of each bowl.
  3. Sprinkle with nutritional yeast, cumin, smoked paprika, salt, and pepper.
Seal and Freeze
  1. Seal the bowls and place them in a single layer on a baking sheet. Freeze for 2 hours until solid. Then stack them in the freezer.
Reheat and Serve
  1. When ready to eat, remove a bowl from the freezer. Vent the lid and microwave on high for 2 minutes, stir, then heat for another 1-2 minutes until steaming.
