Prepare the Dough
- Combine shredded mozzarella and cubed cream cheese in a microwave-safe bowl. Heat in 30-second intervals until smooth and molten.
- Add almond flour, baking powder, garlic powder, and Italian seasoning. Mix well until combined.
- Crack in the egg and knead until the dough comes together. If too sticky, let it rest for a minute.
Shape and Bake
- Place the dough between two sheets of parchment paper and roll out into a rectangle about half an inch thick.
- Use a pizza cutter to slice the rectangle into even strips.
- Brush the tops with melted butter and minced garlic. Sprinkle with grated parmesan cheese.
- Preheat the oven to 400°F (200°C). Slide the breadsticks into the oven and bake for 12-15 minutes, until golden and bubbly.
