Easy Low Carb Chicken Casserole

A comforting and easy-to-make low carb chicken casserole that's perfect for a quick dinner. This recipe uses pre-cooked chicken, broccoli, and a creamy cheese sauce to create a satisfying meal that's light on carbs.

Ingredients
  

  • 3-4 cups Rotisserie or Cooked Chicken Breast shredded or cubed
  • 4 cups Fresh Broccoli Florets
  • 8 ounces Cream Cheese softened
  • 1/2 cup Sour Cream
  • 1/4 cup Chicken Broth
  • 3 cloves Garlic minced
  • 1 medium Onion finely diced
  • 2 cups Cheddar Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 2 tablespoons Butter
  • 1 pinch Black Pepper
  • 1 pinch Salt
  • 1 pinch Red Pepper Flakes optional

Method
 

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Steam the broccoli florets for about 3-4 minutes until tender but still vibrant green. Set aside.
  3. In a small skillet, melt the butter over medium heat. Add the finely diced onion and sauté until translucent. Stir in the minced garlic during the last minute.
  4. In a large mixing bowl, combine the softened cream cheese, sour cream, and chicken broth. Use a whisk to blend until smooth.
  5. Fold in the shredded chicken breast, steamed broccoli, sautéed onion and garlic mixture, and half of the shredded cheddar cheese. Season with salt and black pepper.
  6. Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly.
  7. Sprinkle the remaining cheddar cheese and parmesan cheese over the top. Place the dish in the oven and bake for 20-25 minutes, or until the edges are bubbly and the cheese is golden brown.
  8. Let the casserole sit for about 5-10 minutes before serving to allow the sauce to set.
