- Preheat your oven to 350 degrees Fahrenheit. Line an 8x8 inch baking pan with parchment paper, leaving a little overhang on the sides.
- In a large mixing bowl, mash the ripe bananas until they are almost a liquid consistency with just a few small lumps.
- Add in the peanut butter and vanilla extract. Stir until the mixture is smooth and fragrant.
- Pour in the rolled oats, cinnamon, chia seeds, flax seeds, and chopped walnuts. Stir until the mixture is well combined.
- If using, add the honey or maple syrup and stir until the mixture is well combined.
- Transfer the mixture to your prepared pan. Use the back of a spoon to press it firmly into the corners.
- Place in the center rack and bake for 20 to 25 minutes. You are looking for edges that are golden brown and a center that feels set to the touch.
- Let the bars cool completely in the pan before lifting them out. This cooling period allows the oats to fully hydrate and lock together.
