Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1 can (10.75 oz) condensed cream of chicken soup can substitute with cream of mushroom or celery for variety
  • 1 packet dry Italian dressing mix or your favorite seasoning blend
  • 0.5 cup chicken broth or water
  • 0.25 cup chopped onion optional
  • 1 clove garlic, minced optional
  • salt and pepper to taste

Method
 

  1. Lightly grease the inside of your crockpot with non-stick cooking spray to prevent chicken from sticking.
  2. Arrange the chicken breasts in a single layer at the bottom of the crockpot.
  3. In a bowl, whisk together the cream of chicken soup, Italian dressing mix, and chicken broth. Add chopped onion and minced garlic if using.
  4. Pour the soup mixture evenly over the chicken breasts, ensuring they are well coated.
  5. Season lightly with salt and pepper. Remember that the Italian dressing mix already contains salt, so go easy on the salt shaker.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  7. Once the chicken is cooked, use two forks to shred it directly in the crockpot.
  8. Stir the shredded chicken into the sauce and serve immediately.
