- Lightly grease the inside of your crockpot with non-stick cooking spray to prevent chicken from sticking.
- Arrange the chicken breasts in a single layer at the bottom of the crockpot.
- In a bowl, whisk together the cream of chicken soup, Italian dressing mix, and chicken broth. Add chopped onion and minced garlic if using.
- Pour the soup mixture evenly over the chicken breasts, ensuring they are well coated.
- Season lightly with salt and pepper. Remember that the Italian dressing mix already contains salt, so go easy on the salt shaker.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
- Once the chicken is cooked, use two forks to shred it directly in the crockpot.
- Stir the shredded chicken into the sauce and serve immediately.
