Ingredients
  

  • 1 cup creamy almond butter unsweetened
  • 1 large egg
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 cup dark chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a medium-sized mixing bowl, combine the almond butter, egg, maple syrup (or honey), and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Sprinkle the baking soda and sea salt over the wet mixture. Gently fold them in until everything is evenly incorporated.
  4. If you're adding any optional mix-ins like chocolate chips or nuts, stir them in now.
  5. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie, as they will spread slightly during baking.
  6. Use the back of a spoon or a fork to gently flatten each dough ball into a round disc, about 1/2-inch thick.
  7. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
  8. Remove the cookies from the oven and let them cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
  9. Once cooled, dig in and savor the chewy, nutty goodness.
