- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- In a medium-sized mixing bowl, combine the almond butter, egg, maple syrup (or honey), and vanilla extract. Stir until the mixture is smooth and well combined.
- Sprinkle the baking soda and sea salt over the wet mixture. Gently fold them in until everything is evenly incorporated.
- If you're adding any optional mix-ins like chocolate chips or nuts, stir them in now.
- Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie, as they will spread slightly during baking.
- Use the back of a spoon or a fork to gently flatten each dough ball into a round disc, about 1/2-inch thick.
- Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
- Remove the cookies from the oven and let them cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dig in and savor the chewy, nutty goodness.
