Ingredients
  

The Beef Filling
  • 1.5 lbs Ground beef lean (85/15)
  • 3 large Sweet onions thinly sliced
  • 2 cloves Garlic minced
  • 2 tbsp Butter
  • 1 tbsp Olive oil
  • 1/2 cup Beef broth low sodium
  • 2 tbsp Worcestershire sauce
  • 1 tsp Soy sauce
  • 1 tsp Dried thyme
  • to taste Salt
  • to taste Black pepper
  • 1 tbsp All-purpose flour
  • 8 Brioche buns or sturdy hamburger buns
  • 1.5 cups Swiss cheese shredded (or Gruyère or Provolone)

  • Fresh parsley chopped, for garnish

  • Wooden spoon

Method
 

Caramelize the Onions
  1. In a large deep skillet or Dutch oven over medium heat, melt the butter and heat the olive oil. Add the thinly sliced onions and cook, stirring occasionally, for 15 minutes until soft and translucent. Continue cooking for another 10-15 minutes until deeply golden brown and caramelized, scraping up any browned bits.
  2. Stir in the minced garlic and dried thyme, cooking for 1 minute until fragrant.
  3. Push onions to one side. Increase heat to medium-high, add ground beef, and cook 5-7 minutes until browned. Drain excess fat.
  4. Sprinkle flour over mixture and cook 1 minute. Stir in beef broth, Worcestershire sauce, soy sauce; season with salt and pepper. Simmer 5-10 minutes until thickened.
  5. Preheat broiler. Toast bun halves lightly under broiler for 1 minute. Spoon filling onto bottoms, top with Swiss cheese.
  6. Broil 1-2 minutes until cheese bubbles. Top with bun halves and serve immediately.
