- In a large skillet, melt butter over medium heat. Add diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, about 8-10 minutes until apples are tender and filling thickened. Remove from heat and cool slightly.
- On a lightly floured surface, unfold one sheet of pie crust. Roll out gently to slightly thin it.
- Cut out 3-inch circles from the pie crust using a cookie cutter or knife. Repeat with second sheet.
- Place a spoonful of apple filling in center of half the crust circles. Do not overfill.
- Cover filling with remaining pie crust circles. Press edges with a fork to seal tightly.
- Heat vegetable oil in a large heavy-bottomed pot or deep skillet to 350°F (175°C). Use thermometer to monitor.
- Carefully fry pies in batches, 2-3 minutes per side, until golden brown and crispy. Do not overcrowd pan.
- Remove pies with slotted spoon and drain on paper towels.
- Dust with powdered sugar while warm, if desired.
- Serve warm and enjoy alone or with vanilla ice cream or whipped cream.

Notes
