Garlic Parmesan Cheeseburger Bombs

Ingredients
  

  • 1 lb ground beef 80/20 blend
  • 1 small onion finely diced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp ketchup or BBQ sauce
  • 1 cup cheddar cheese shredded
  • 1 can (8 count) refrigerated biscuit dough
  • 4 tbsp unsalted butter melted
  • 2 cloves garlic minced
  • 1/4 cup parmesan cheese freshly grated
  • 1/2 tsp dried Italian seasoning
  • 1 tbsp fresh parsley chopped

Method
 

  1. Heat a skillet over medium-high heat. Add ground beef and diced onion. Cook, breaking up the beef, until fully browned. Drain excess grease.
  2. Return beef to skillet. Add Worcestershire sauce, ketchup, salt, and pepper. Cook 2 minutes until liquid evaporates. Let cool slightly.
  3. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper. Separate biscuit dough rounds and flatten slightly.
  4. Place 1-2 tablespoons beef mixture in center of each biscuit. Top with cheddar cheese.
  5. Bring edges of dough up and around filling. Pinch seams tightly to seal, forming balls. Place seam-side down on baking sheet.
  6. In small bowl, mix melted butter, minced garlic, Italian seasoning, and half the parmesan cheese.
  7. Brush butter mixture over bombs. Sprinkle with remaining cheddar and parmesan cheese.
  8. Bake 12-15 minutes until biscuits are golden brown and cheese is melted and bubbly.
  9. Brush with remaining butter and sprinkle with fresh parsley. Cool slightly before serving.

Notes

These bombs are perfect for meal prep! Make ahead and freeze uncooked bombs on baking sheet, then transfer to freezer bag. Bake from frozen, adding 5-8 minutes to cooking time.
