- In a small bowl, lightly mash the blueberries with a fork. Stir in the balsamic vinegar and honey.
- Generously butter one side of each bread slice.
- Place one slice of bread, butter side down, into a cold skillet. Layer the brie cheese on top, followed by the blueberry mixture. Sprinkle with fresh thyme.
- Place the second slice of bread on top, butter side up. Cook over medium-low heat for 4-5 minutes until the bottom is golden brown.
- Flip the sandwich and cook for another 2-3 minutes, then cover with a lid for the final 2 minutes to ensure the cheese is melted through.
- Remove from heat and let it rest for 1 minute before slicing and serving.

Notes
