Gourmet Blueberry Grilled Cheese

Ingredients
  

  • 2 slices Sourdough Bread thick slices
  • 1/2 cup Fresh Blueberries or high-quality preserves
  • 4 slices Brie Cheese or goat cheese
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Honey
  • A few leaves Fresh Thyme
  • 2 tbsp Unsalted Butter room temperature

Method
 

  1. In a small bowl, lightly mash the blueberries with a fork. Stir in the balsamic vinegar and honey.
  2. Generously butter one side of each bread slice.
  3. Place one slice of bread, butter side down, into a cold skillet. Layer the brie cheese on top, followed by the blueberry mixture. Sprinkle with fresh thyme.
  4. Place the second slice of bread on top, butter side up. Cook over medium-low heat for 4-5 minutes until the bottom is golden brown.
  5. Flip the sandwich and cook for another 2-3 minutes, then cover with a lid for the final 2 minutes to ensure the cheese is melted through.
  6. Remove from heat and let it rest for 1 minute before slicing and serving.

Notes
