Ingredients
  

Chicken
  • 4 pieces Boneless, skinless chicken breasts Pounded to even thickness
Marinade
  • 2 tbsp Olive oil
  • 3 cloves Garlic Minced
  • 1 tsp Salt
  • 1 tsp Pepper
Toppings
  • 4 slices Fresh mozzarella cheese Thick slices
  • 1 cup Cherry tomatoes Halved
  • 1 cup Fresh basil leaves Chopped
  • 2 tbsp Balsamic vinegar
  • 1 tbsp Olive oil

Method
 

Prepare the Chicken
  1. Preheat your grill to medium-high heat.
  2. Place the chicken on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  3. During the last 2 minutes of grilling, place a thick slice of fresh mozzarella cheese on each breast. Close the grill lid to let the cheese melt into a gooey, white blanket.
  4. While the chicken cooks, toss the cherry tomatoes and chopped fresh basil with olive oil and balsamic vinegar.
  5. Remove the chicken from the grill and let it rest for a few minutes. Top with the tomato and basil mixture. Drizzle with balsamic glaze.

Notes

This recipe is naturally a keto grilled chicken caprese winner. To make it a paleo grilled chicken caprese, simply omit the cheese or use a nut-based cheese substitute.
