Prepare the Chicken
- Preheat your grill to medium-high heat.
- Place the chicken on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- During the last 2 minutes of grilling, place a thick slice of fresh mozzarella cheese on each breast. Close the grill lid to let the cheese melt into a gooey, white blanket.
- While the chicken cooks, toss the cherry tomatoes and chopped fresh basil with olive oil and balsamic vinegar.
- Remove the chicken from the grill and let it rest for a few minutes. Top with the tomato and basil mixture. Drizzle with balsamic glaze.
