- Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish.
- In a large skillet over medium-high heat, add the oil. Once shimmering, add the diced onion. Sauté until translucent, about 3-4 minutes. Add the ground beef and break it up with a wooden spoon. Cook until the beef is fully browned and no pink remains. Drain any excess grease.
- Reduce the heat to medium. Add the minced garlic and cook for 1 minute until fragrant. Stir in the taco seasoning and cook for another minute. Pour in the ½ cup of salsa and stir well. Add the drained black beans. Bring the mixture to a low simmer and cook for 3-5 minutes until the sauce thickens slightly.
- Spread a single, slightly overlapping layer of tortilla chips across the bottom of the prepared baking dish.
- Spoon half of the seasoned ground beef and bean mixture evenly over the chips. Sprinkle one cup of the shredded cheese evenly over the beef.
- Add the remaining chips in a second layer. Top with the remaining beef mixture, then sprinkle the final cup of shredded cheese.
- Place the baking dish in the oven. Bake for 8-12 minutes, or until the cheese is completely melted and bubbling, and the tips of the chips are just beginning to turn golden.
- Remove from the oven and let rest for 5 minutes. Top generously with optional toppings like sour cream, cilantro, olives, green onions, jalapeños, and extra salsa. Serve immediately.
