Preparation Steps
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large mixing bowl, mash the ripe bananas until mostly smooth with some lumpy bits.
- Add the melted butter, sugar, eggs, vanilla, and drained crushed pineapple to the mashed bananas. Mix until well combined.
- Sift together the flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture.
- Gently fold in the shredded coconut and optional macadamia nuts.
- Pour the batter into the prepared loaf pan.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool completely in the pan before slicing.
