  • 1 teaspoon ground cinnamon

  • 1 large apple peeled and diced
  • 2 large eggs
  • 1 cup milk any kind, dairy or plant-based
  • 0.25 cup maple syrup or brown sugar
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract

  • 0.25 cup chopped walnuts or pecans
  • 2 tablespoons chia seeds

Method
 

Prepare the Oven
  1. In a large bowl, whisk together the oats, baking powder, cinnamon, and salt.
  2. In a separate bowl, beat the eggs. Then add the milk, maple syrup, melted butter, and vanilla extract. Whisk until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the diced apple and any optional add-ins like nuts or chia seeds.
  5. Scoop the mixture evenly into the prepared muffin tin. Each cup will be about three-quarters full.
  6. Bake for 18 to 22 minutes, until the tops are golden brown and a toothpick inserted in the center comes out clean.
  7. Let the cups cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
