  • 3 large ripe bananas mashed
  • 2 large eggs
  • 0.5 cup milk
  • 0.33 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 0.25 cup melted butter or coconut oil

Method
 

Preheat and Prep
  1. Preheat your oven to 350 degrees Fahrenheit. Line a muffin tin with paper liners or grease it with non-stick cooking oil.
Mash the Bananas
  1. In a large mixing bowl, peel your ripe bananas and mash them until mostly smooth. A few small lumps are fine.
Whisk the Wet Ingredients
  1. Add the eggs, honey, milk, vanilla extract, and melted butter to the mashed bananas. Whisk everything together until the mixture is uniform and pale yellow.
Incorporate Dry Ingredients
  1. Gently fold in the rolled oats, flour, baking soda, and cinnamon using a spatula. Mix until just combined.
Fill the Tins
  1. Scoop the batter into the muffin cups, filling each about three quarters of the way full.
Bake to Perfection
  1. Place the tin in the center rack of your oven. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Cool Down
  1. Let the muffins sit in the tin for about five minutes before transferring them to a wire rack. This helps them set so they do not fall apart when you peel off the liner.
