Preheat and Prep
- Preheat your oven to 350 degrees Fahrenheit. Line a muffin tin with paper liners or grease it with non-stick cooking oil.
Mash the Bananas
- In a large mixing bowl, peel your ripe bananas and mash them until mostly smooth. A few small lumps are fine.
Whisk the Wet Ingredients
- Add the eggs, honey, milk, vanilla extract, and melted butter to the mashed bananas. Whisk everything together until the mixture is uniform and pale yellow.
Incorporate Dry Ingredients
- Gently fold in the rolled oats, flour, baking soda, and cinnamon using a spatula. Mix until just combined.
Fill the Tins
- Scoop the batter into the muffin cups, filling each about three quarters of the way full.
Bake to Perfection
- Place the tin in the center rack of your oven. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Cool Down
- Let the muffins sit in the tin for about five minutes before transferring them to a wire rack. This helps them set so they do not fall apart when you peel off the liner.
