- Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, 0.5 teaspoon of sea salt, and 0.25 teaspoon of smoked paprika. Spread them evenly on a parchment-lined baking sheet. Roast for 20 minutes, flipping halfway through, until the edges turn golden brown and caramelized.
- Place a heavy cast iron skillet over medium heat. Add 1 tablespoon of olive oil. Drop in the lean ground turkey and break it apart with a wooden spoon. Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of ground cumin, 0.5 teaspoon of smoked paprika, salt, and black pepper. Cook for 7-8 minutes until the turkey turns browned and crisp around the edges.
- Turn down the skillet heat to low. Toss the fresh baby spinach or chopped kale directly into the pan with the cooked turkey. Stir gently for 2 minutes until the greens wilt slightly while retaining their vibrant color. Remove the skillet from heat.
- In a separate small nonstick pan over medium-low heat, melt a small knob of butter or drizzle olive oil. Crack the eggs gently into the pan. Cook for 3 minutes until the egg whites set firmly while the yolks remain soft and yellow.
- Divide the warm roasted sweet potatoes evenly among four wide breakfast bowls. Scoop a generous portion of seasoned ground turkey and wilted greens alongside the potatoes. Carefully place a soft egg in the center of each bowl.
- Top each bowl with quartered avocado slices, a spoonful of fresh salsa, and a sprinkle of chopped cilantro. Serve immediately while warm.

For a keto and low-carb adaptation, skip the sweet potatoes and replace them with roasted cauliflower florets, sautéed zucchini cubes, or shredded cabbage.
