Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup cottage cheese preferably low-fat
  • 1 garlic clove minced
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh basil chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Toothpicks to secure the chicken

Instructions
 

  • Prepare the Filling: In a mixing bowl, combine cottage cheese, minced garlic, fresh parsley, basil, lemon zest, and a pinch of salt and pepper. Stir everything together until well combined. This filling should be creamy and fragrant, with the lemon zest adding a hint of brightness to the rich cheese.
  • Prepare the Chicken: Butterfly each chicken breast by slicing it horizontally down the side, being careful not to cut all the way through. Open each breast like a book, creating a pocket for the filling. Season both sides of the chicken breasts with salt and pepper.
  • Stuff the Chicken: Spoon the cottage cheese mixture into the center of each chicken breast and fold the chicken back over to seal the filling inside. Use toothpicks to secure the edges so the filling doesn’t spill out while cooking.
  • Sear the Chicken: Heat 2 tablespoons of olive oil in a large ovenproof skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear for 3-4 minutes on each side until they are golden brown.
  • Bake to Perfection: Preheat your oven to 375°F (190°C). Transfer the skillet with the seared chicken breasts to the oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C). Remove the toothpicks before serving.
  • Serve and Enjoy: Once baked, let the chicken rest for a few minutes before slicing. Serve with your favorite side dish, like roasted veggies, mashed potatoes, or a refreshing cucumber salad.

Notes

Always use a meat thermometer to ensure the chicken is cooked to the proper internal temperature.
