Prepare the Chicken
- Pat the chicken pieces dry. Season generously on all sides with salt, pepper, garlic powder, paprika, and optional blackened seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown and cooked through to 165°F internal temperature. Remove and set aside to rest.
Make the Honey Mustard Glaze
- In a mixing bowl, whisk together mayonnaise, Dijon mustard, honey, vinegar or lemon juice, and garlic powder until smooth.
- Coat the seasoned chicken with half of the glaze in the warm skillet or a bowl, tossing gently.
Assemble and Bake the Sliders
- Preheat oven to 350°F. Slice slider buns horizontally. Place bottoms in a 9x13 baking dish and top with cheese quarters.
- Add glazed chicken on top of cheese.
- Brush melted butter mixed with minced garlic and parsley on the inside of top buns. Place tops on sliders and cover loosely with foil.
- Bake for 10-12 minutes until cheese is melted and buns are lightly toasted.
Add Toppings and Serve
- Remove from oven, lift tops, and add lettuce, tomato slices, and bacon on each.
- Drizzle remaining honey mustard glaze over toppings or serve on the side.
