- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter, honey, Greek yogurt, eggs, and vanilla extract to the mashed bananas. Whisk everything together until well combined.
- Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Use a spatula to fold the dry ingredients into the wet ones until just combined.
- Gently fold in the chopped walnuts or pecans if using.
- Pour the batter into the prepared loaf pan and spread it evenly. Drizzle the extra tablespoon of honey over the top of the batter.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be a deep golden brown.
- Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once cooled, slice into thick pieces and serve.
