  • 1/2 cup honey plus 1 tablespoon for drizzling
  • 1/3 cup melted unsalted butter or coconut oil for dairy-free
  • 2 large eggs or flax eggs for vegan
  • 1/4 cup plain Greek yogurt or applesauce
  • 2 teaspoons vanilla extract
  • 1 3/4 cups all-purpose flour or gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter, honey, Greek yogurt, eggs, and vanilla extract to the mashed bananas. Whisk everything together until well combined.
  4. Sprinkle the flour, baking soda, salt, and cinnamon over the wet mixture. Use a spatula to fold the dry ingredients into the wet ones until just combined.
  5. Gently fold in the chopped walnuts or pecans if using.
  6. Pour the batter into the prepared loaf pan and spread it evenly. Drizzle the extra tablespoon of honey over the top of the batter.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be a deep golden brown.
  8. Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
  9. Once cooled, slice into thick pieces and serve.
