Ingredients

Cake
  • 1/2 cup unsalted butter softened
  • 1/2 cup honey plus extra for drizzling
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup milk or buttermilk for extra tenderness

Equipment

  • Mixing bowl
  • - Whisk
  • 9-inch round or 8x8 square baking pan

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round or 8x8 square baking pan with butter or line with parchment paper.
  2. In a large bowl, beat the softened butter and honey together until light and fluffy, about 2 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
  5. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Start and end with flour. Mix just until combined, do not overmix.
  6. Pour the batter into the prepared pan and smooth the top. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. While still warm, drizzle a tablespoon of honey over the top.
