Ingredients
  

  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • optional fillings (cooked chicken or ground beef, black beans, corn, salsa) Add Halloween candy pieces for variation
  • cooking spray or olive oil

Instructions
 

  • Lay two tortillas flat on a clean work surface.
  • Using a small sharp knife or cookie cutters, carefully cut out Jack-o’-Lantern faces in one tortilla. Be creative with the shapes!
  • Sprinkle about 1 cup of shredded cheese evenly over the other tortilla.
  • If desired, add cooked chicken, ground beef, black beans, corn, or salsa over the cheese. You can add Halloween candy pieces too.
  • Carefully place the tortilla with the cut-out face on top of the cheese and fillings.
  • Heat a large skillet or griddle over medium heat. Lightly spray with cooking spray or brush with olive oil.
  • Place the quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.
  • Remove from the skillet and let cool slightly before cutting into wedges and serving.

Notes

For gluten-free option, use corn tortillas. Vegan cheese can be used for dairy-free. Add a tablespoon of cream cheese per quesadilla for extra creaminess. Cook over medium-low heat to prevent burning. Use Halloween-themed cookie cutters for variation.
Variation tips: add chili flakes or hot sauce for spice, or include Halloween candy for sweetness. Add shredded BBQ chicken for a hearty meal.
