- Lay two tortillas flat on a clean work surface.
- Using a small sharp knife or cookie cutters, carefully cut out Jack-o’-Lantern faces in one tortilla. Be creative with the shapes!
- Sprinkle about 1 cup of shredded cheese evenly over the other tortilla.
- If desired, add cooked chicken, ground beef, black beans, corn, or salsa over the cheese. You can add Halloween candy pieces too.
- Carefully place the tortilla with the cut-out face on top of the cheese and fillings.
- Heat a large skillet or griddle over medium heat. Lightly spray with cooking spray or brush with olive oil.
- Place the quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.
- Remove from the skillet and let cool slightly before cutting into wedges and serving.
