- 4 large flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- optional fillings (cooked chicken or ground beef, black beans, corn, salsa) Add Halloween candy pieces for variation
- cooking spray or olive oil
Lay two tortillas flat on a clean work surface.
Using a small sharp knife or cookie cutters, carefully cut out Jack-o’-Lantern faces in one tortilla. Be creative with the shapes!
Sprinkle about 1 cup of shredded cheese evenly over the other tortilla.
If desired, add cooked chicken, ground beef, black beans, corn, or salsa over the cheese. You can add Halloween candy pieces too.
Carefully place the tortilla with the cut-out face on top of the cheese and fillings.
Heat a large skillet or griddle over medium heat. Lightly spray with cooking spray or brush with olive oil.
Place the quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.
Remove from the skillet and let cool slightly before cutting into wedges and serving.
For gluten-free option, use corn tortillas. Vegan cheese can be used for dairy-free. Add a tablespoon of cream cheese per quesadilla for extra creaminess. Cook over medium-low heat to prevent burning. Use Halloween-themed cookie cutters for variation.
Variation tips: add chili flakes or hot sauce for spice, or include Halloween candy for sweetness. Add shredded BBQ chicken for a hearty meal.
