Keto Meatball Stroganoff

A comforting and low-carb version of the classic stroganoff, featuring tender meatballs in a creamy mushroom sauce.

Meatballs
  • 1.5 lbs Ground Beef 80/20 blend
  • 1 cup Almond Flour
  • 1 Egg
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
Sauce
  • 2 tbsp Butter
  • 8 oz Mushrooms sliced
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 cup Beef Broth
  • 2 tbsp Dijon Mustard
  • 2 tbsp Worcestershire Sauce
  • 4 oz Cream Cheese softened
  • 1 cup Sour Cream
  • 2 tbsp Fresh Parsley chopped

Method
 

Prepare the Meatballs
    Sear the Meatballs
      Make the Sauce
      1. Add the minced garlic and cook for another minute. Pour in the beef broth, Dijon mustard, and Worcestershire sauce. Use a wooden spoon to scrape up the browned bits from the bottom of the pan.
      2. Reduce the heat to low. Stir in the cream cheese until melted, followed by the sour cream. Simmer for about 5 minutes until the sauce has thickened.
      Combine and Serve
