  • 2 cups Mozzarella cheese Shredded, low moisture
  • 2 oz Cream cheese
  • 1.5 cups Almond flour
  • 1 large Egg
  • 1 tsp Baking powder
  • 1 tsp Italian seasoning
  • 0.5 tsp Garlic powder

  • 0.5 cup Sliced pepperoni

Method
 

Prepare the Dough
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in 30-second intervals, stirring in between, until the mixture is glossy and completely melted.
  3. Add the almond flour, baking powder, Italian seasoning, and garlic powder to the melted cheese mixture. Break the egg into the center and begin to knead.
  4. Fold in about two-thirds of the pepperoni slices. If the dough becomes too sticky or cools down too fast, a quick 10-second blast in the microwave will bring back its pliability.
Bake the Pizza Bites
  1. Line a baking sheet with parchment paper. Pinch off small pieces of dough, about the size of a golf ball, and roll them between your palms.
  2. Place the dough pieces on the baking sheet, leaving a bit of space for expansion. Top each ball with a remaining slice of pepperoni.
  3. Bake for 12 to 15 minutes, until the bottom is deep golden brown and the top is lightly toasted.
