  • 2.5 pounds chicken wings flats and drumettes, separated
Marinade
  • 3 large cloves garlic minced
  • 1 large lemon zested and juiced
  • 2 tablespoons olive oil
  • 2 tablespoons butter melted
  • 1 tablespoon honey
  • 1 teaspoon soy sauce optional
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground, or to taste
  • 2 tablespoons parsley chopped, for garnish
  • 0.25 teaspoon red pepper flakes optional

Method
 

  1. Pat the chicken wings dry with paper towels, ensuring no moisture remains on the skin for better crispiness.
  2. In a small bowl, mix together minced garlic, lemon zest, lemon juice, olive oil, melted butter (if using), honey (if using), soy sauce (if using), salt, and black pepper.
  3. Pour the marinade over the wings and toss well to coat evenly. Marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place an oven-safe wire rack on top.
  5. Remove wings from marinade and let excess drip off. Arrange the wings in a single layer on the wire rack, making sure they don’t touch.
  6. Bake for 25-30 minutes, then flip the wings and continue baking for another 20-25 minutes until golden brown and crispy.
  7. Transfer to a serving platter and garnish with fresh parsley if desired. Serve immediately while hot and crispy.
