Ingredients

For the base
  • 12 cups 12 popped popcorn (about ½ cup kernels)
  • 1 cup 1 mini pretzels
  • 1 cup 1 mini marshmallows
  • 1 cup 1 Lucky Charms marshmallows
For the coating
  • 12 ounces 12 white candy melts
  • 6 ounces 6 green candy melts
  • St. PatriSpec addition St. Patrick’s Day sprinkles (shamrocks, gold coins, rainbow nonpareils), to taste

Equipment

  • Large Baking Sheet
  • Parchment or wax paper
  • microwave-safe bowl,
  • Spatula or large spoons

Method

  1. Line a large baking sheet with parchment or wax paper to prevent sticking and aid in cleanup.
  2. Pop the popcorn kernels to yield 12 cups popped popcorn. Remove any unpopped kernels. Spread evenly on the prepared baking sheet.
  3. Place white candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and pourable.
  4. Drizzle the melted white chocolate over the popcorn. Gently toss with a spatula or spoons to coat evenly.
  5. While white chocolate is still wet, sprinkle half of the mini pretzels, mini marshmallows, and Lucky Charms marshmallows. Toss gently.
  6. Repeat melting process with green candy melts in 30-second intervals until smooth.
  7. Drizzle green candy melts over the mixture in fun patterns like zigzags or swirls.
  8. Sprinkle St. Patrick’s Day sprinkles, remaining marshmallows, pretzels, and any other toppings before green chocolate sets.
  9. Allow to sit at room temperature for 30-60 minutes until hardened, or refrigerate for 10 minutes if in a hurry.
  10. Break into snack-sized pieces and serve.
