Loaded Potato Taco Bowl

A delicious and easy-to-make loaded potato taco bowl recipe that combines crispy roasted potatoes, seasoned ground beef, and a variety of toppings for a satisfying meal.

Ingredients
  

For the potatoes
  • 2 lbs russet potatoes scrubbed clean and cut into 1 inch cubes
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 sprinkle cumin
  • 1 sprinkle chili powder
For the taco meat
  • 1 lb ground beef 80/20 is perfect
  • 1 packet taco seasoning or 3 tablespoons of homemade
  • 1/3 cup water
For the base
  • 1 can black beans drained and rinsed
  • 1 pinch salt
  • 1 little cumin
For the toppings
  • 1 cup shredded sharp cheddar cheese or a Mexican blend
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes or use pico de gallo
  • 1 diced avocado
  • 1/4 cup sliced jalapeños fresh or pickled
  • 1/2 cup sour cream or Greek yogurt for a lighter option
  • 1/2 cup cilantro roughly chopped
  • 1 handful crushed tortilla chips
Optional extras
  • 1/2 cup corn kernels fresh, frozen, or fire roasted
  • 1/4 cup sliced green onions
  • 1 squeeze fresh lime juice
  • 1 drizzle hot sauce your favorite

Method
 

Preheat and prep the potatoes
  1. Preheat your oven to 425 degrees F. On a large rimmed baking sheet, toss the cubed potatoes with 2 tablespoons of olive oil, a generous pinch of salt, and a sprinkle of cumin and chili powder. Spread them out in a single layer. Roast for 25 to 30 minutes, flipping halfway through, until they are golden and crispy on the outside and tender on the inside.
Cook the taco meat
  1. While the potatoes roast, place a large skillet over medium high heat. Add the ground beef and cook, breaking it up with a spoon, until it is nicely browned, about 6 to 8 minutes. Drain off any excess fat. Sprinkle the taco seasoning over the meat, then add 1/3 cup of water. Stir well, reduce the heat to low, and let it simmer for 3 to 4 minutes until the sauce thickens and clings to the meat.
Warm the black beans
  1. In a small saucepan over medium heat, warm the drained black beans with a pinch of salt and a little cumin. Stir occasionally until they are heated through. This takes about 3 minutes. Set them aside.
Assemble the bowls
  1. Grab your favorite wide bowls. Start with a generous scoop of the crispy roasted potatoes as the base. Next, spoon a portion of the seasoned ground beef right on top of the potatoes. Add a scoop of the warm black beans beside the meat.
Add the toppings
  1. Add a handful of shredded lettuce, a spoonful of diced tomatoes, and a few slices of creamy avocado. Then comes the cheese. Sprinkle a generous amount of shredded cheddar over the warm meat and beans so it starts to melt slightly. Add a dollop of sour cream on the side. Finally, scatter a handful of crushed tortilla chips right on top for that essential crunch. Finish with a sprinkle of fresh cilantro and a few slices of jalapeños if you like a little heat.
Serve immediately
  1. Put the bowls on the table and let everyone dig in. I always set out a few extra toppings so everyone can customize their bowl right at the table.

Notes

For a vegan loaded potato taco bowl, simply swap the ground beef for cooked lentils or crumbled tofu, use a vegan cheese shred, and replace the sour cream with a cashew based crema or store bought vegan sour cream. It is still incredible.
