Ingredients
  

For the Marinade
  • 1/4 cup Extra Virgin Olive Oil
  • 3 tbsp Fresh Lemon Juice
  • 1 tbsp Fresh Lemon Zest
  • 4 cloves Garlic minced
  • 1 tbsp Dried Oregano
  • 1/2 tsp Sea Salt
  • 1/2 tsp Cracked Black Pepper
  • 1 tbsp Greek Yogurt optional
For the Chicken
  • 4 pieces Chicken Thighs or Breasts boneless, skinless

Equipment

  • Mixing bowl
  • Meat Mallet
  • Resealable Bag or Shallow Dish
  • Cast Iron Skillet or Baking Sheet
  • Measuring spoons and cups

Method
 

Prepare the Marinade
  1. If using chicken breasts, use a meat mallet to lightly even out the thickness.
The Marinating Process
  1. Preheat your cast iron skillet or baking sheet. For the oven, set it to 425 degrees Fahrenheit.
Sear for Flavor
  1. Once removed from the heat, cover the chicken loosely with foil and let it rest for 5 to 10 minutes. This allows the juices to redistribute throughout the meat.

Notes
