                  These Queso Chicken Enchiladas make excellent leftovers. Store any remaining enchiladas in an airtight container in the fridge for up to 3 days. For reheating, use the oven at 350 degrees Fahrenheit covered with foil to keep the moisture in. If you do use a microwave, a damp paper towel placed over the plate can help keep things soft. You can also freeze these for up to two months. Just make sure they are wrapped tightly in plastic wrap and then foil to prevent freezer burn.
