Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Wash the delicata squash thoroughly. Slice off the stem and blossom ends. Cut the squash lengthwise in half.
  3. Scoop out the seeds and stringy pulp with a spoon. Optionally, rinse and roast seeds separately for a snack.
  4. Place squash halves cut-side down on a cutting board and slice crosswise into 1/2-inch thick rings.
  5. In a large bowl, whisk together olive oil, pure maple syrup, ground cinnamon, ground nutmeg, sea salt, and black pepper to create the maple glaze.
  6. Add the squash rings to the bowl and gently toss until each ring is well coated with the maple glaze.
  7. Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  8. Roast in the oven for 20-25 minutes, flipping halfway through, until fork-tender and caramelized on the edges.
  9. Remove from oven and arrange on a serving platter. Garnish with fresh parsley or toasted pecans if desired. Serve immediately.
