- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat for easy cleanup.
- Wash the delicata squash thoroughly. Slice off the stem and blossom ends. Cut the squash lengthwise in half.
- Scoop out the seeds and stringy pulp with a spoon. Optionally, rinse and roast seeds separately for a snack.
- Place squash halves cut-side down on a cutting board and slice crosswise into 1/2-inch thick rings.
- In a large bowl, whisk together olive oil, pure maple syrup, ground cinnamon, ground nutmeg, sea salt, and black pepper to create the maple glaze.
- Add the squash rings to the bowl and gently toss until each ring is well coated with the maple glaze.
- Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
- Roast in the oven for 20-25 minutes, flipping halfway through, until fork-tender and caramelized on the edges.
- Remove from oven and arrange on a serving platter. Garnish with fresh parsley or toasted pecans if desired. Serve immediately.
