Million Dollar Chicken Casserole

Ingredients
  

  • 4 cups cooked and shredded chicken (rotisserie chicken works perfectly)
  • 8 ounces cream cheese softened
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter melted
  • 1 sleeve Ritz crackers crushed (about 1 1/2 cups)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Method
 

  1. Preheat the oven to 350°F (175°C). Spray a 9x13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine the softened cream cheese, cottage cheese, sour cream, and cream of chicken soup. Mix until smooth and creamy. Stir in garlic powder, onion powder, and black pepper.
  3. Gently fold shredded chicken into the creamy mixture until evenly coated.
  4. Pour the chicken mixture into the prepared baking dish and spread into an even layer.
  5. In a small bowl, combine the crushed Ritz crackers with melted butter until moistened.
  6. Sprinkle the buttered cracker crumbs over the top of the casserole. Bake for 25 to 30 minutes, or until hot and bubbly with a golden brown topping.
  7. Let the casserole rest for 5 to 10 minutes. Garnish with fresh chopped parsley before serving.
