Ingredients
  

For the Crust
  • 2 cups cauliflower rice steamed and squeezed extremely dry
  • 1 large egg
  • 2 tablespoons cream cheese
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
For the Sauce and Toppings
  • 1 cup tomato sauce high quality, no added sugar
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup pepperoni traditional
  • 1/2 cup mushrooms thinly sliced
  • 1/2 cup bell peppers diced
  • 1/2 cup spinach fresh
  • 1 tablespoon extra virgin olive oil

Method
 

Prepare the Crust
  1. Steam the cauliflower rice until tender. Squeeze out all the moisture using a cheesecloth.
  2. In a large bowl, combine the cauliflower rice, egg, cream cheese, garlic powder, and Italian seasoning. Mix until a dough forms.
  3. Line a baking sheet with parchment paper. Take small handfuls of the dough and press them into circles about 3 inches wide. Keep them about half an inch thick.
