- Place the entire package of Mint Creme Oreos into a food processor. Pulse until they are crushed into fine crumbs. If you don't have a food processor, place them in a large ziplock bag and crush with a rolling pin. The texture should be sandy with no large chunks.
- Transfer the Oreo crumbs to a large mixing bowl. Add the softened cream cheese. Using a hand mixer or sturdy spatula, mix until fully combined into a thick, dough-like ball.
- Line a baking sheet with parchment or wax paper. Scoop about 1 tablespoon of mixture and roll into a smooth 1-inch ball. Place on the prepared baking sheet. Repeat until all mixture is used.
- Place the baking sheet with the balls into the freezer for 15-20 minutes to firm up.
- While balls chill, place white candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring until melted and smooth. Stir in green gel food coloring to reach desired shade.
- Remove chilled balls from freezer. Dip one at a time into melted candy, using a fork to roll and coat fully. Let excess drip off, then place back on parchment.
- Immediately after dipping, while coating is wet, add sprinkles. Let set at room temperature or in fridge for 15-20 minutes until firm.
