  • 1.5 pounds boneless, skinless chicken thighs or breasts I prefer thighs for extra juiciness
Sauce
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 0.5 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk or half and half for extra richness
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese optional, but highly recommended
  • chopped green onions for garnish

Season and sear the chicken
    Sauté the aromatics
      Make the roux
        Add liquids and seasonings
          Finish with sour cream and cheese

            Notes

            For the slow cooker version: Complete steps 1 through 3 on the stovetop, then transfer everything to the slow cooker. Add the broth and milk, then cook on low for 4 to 5 hours or high for 2 to 3 hours. Stir in sour cream and cheese before serving. For the pressure cooker version, use the sauté function for steps 1 to 3, then cook on high pressure for 10 minutes with a quick release. Finish with sour cream and cheese.
