Ingredients
  

  • 1 cup Pumpkin Puree (not pumpkin pie filling)
  • 1 1/2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar packed
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 2 teaspoons Pumpkin Pie Spice
  • 1/4 teaspoon Salt
  • Cream Cheese Frosting (see recipe link or store-bought)
  • Halloween sprinkles optional for decoration

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • In a separate bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix!
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely in the pan before frosting.
  • Frost with cream cheese frosting and decorate with sprinkles, if desired.
  • Cut into squares and enjoy your delicious moist pumpkin bars!

Notes

You can substitute coconut oil instead of vegetable oil, and for gluten-free, use a 1:1 gluten-free flour blend. Add nuts or a pinch of cayenne for variations.
