No Bake Brownie Bites

Easy 3-ingredient no-bake brownie bites that are soft, chewy, and intensely chocolatey.

  • 2 cups Soft Medjool Dates pitted and soaked in warm water for 10 minutes
  • 1.5 cups Raw Walnuts or Almonds
  • 0.5 cup Unsweetened Cocoa Powder high quality Dutch processed
  • 1 pinch Sea Salt optional

Equipment

  • Mixing bowl
  • Parchment paper

Method
 

  1. Place the walnuts or almonds into a food processor and pulse until they reach a fine, crumbly texture.
  2. Add the cocoa powder and pulse a few more times to mix well.
  3. Add the pitted dates one at a time while the processor is running. The mixture will start to clump together.
  4. Stop the machine and pinch a bit of the dough between your fingers. It should feel like soft fudge. If it is too dry, add a teaspoon of water or a few more dates. If it is too sticky, add a tablespoon more of cocoa powder.
  5. Using a small cookie scoop or your hands, roll the mixture into one inch spheres. Place them on a parchment lined tray.
  6. Place the tray in the fridge for at least 20 minutes to allow the flavors to meld and the fats in the nuts to firm up.
