- Place the walnuts or almonds into a food processor and pulse until they reach a fine, crumbly texture.
- Add the cocoa powder and pulse a few more times to mix well.
- Add the pitted dates one at a time while the processor is running. The mixture will start to clump together.
- Stop the machine and pinch a bit of the dough between your fingers. It should feel like soft fudge. If it is too dry, add a teaspoon of water or a few more dates. If it is too sticky, add a tablespoon more of cocoa powder.
- Using a small cookie scoop or your hands, roll the mixture into one inch spheres. Place them on a parchment lined tray.
- Place the tray in the fridge for at least 20 minutes to allow the flavors to meld and the fats in the nuts to firm up.
