Ingredients
  

For the Bourbon Balls
  • 1.5 cups vanilla wafer crumbs
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar
  • 0.25 cup unsweetened cocoa powder
  • 0.25 cup bourbon
  • 0.5 cup chopped maraschino cherries, drained
  • 0.25 cup corn syrup
For the Chocolate Coating
  • 8 oz semi-sweet chocolate chips melted
  • 0.25 cup heavy cream
  • optional flaky sea salt or crushed freeze dried cherries for topping

Method
 

Prepare the Mixture
  1. Pulse vanilla wafers in a food processor until fine crumbs.
  2. In a large mixing bowl, whisk together wafer crumbs, chopped pecans, powdered sugar, and cocoa powder.
  3. Stir in bourbon, chopped cherries, and corn syrup until mixture is thick and sticky.
  4. Cover and chill in fridge for 30 minutes.
Roll and Coat
  1. Using a small cookie scoop, roll mixture into 1-inch balls and place on parchment-lined baking sheet.
  2. Melt chocolate and heavy cream together in a double boiler or microwave until smooth.
  3. Dip each ball into chocolate using a fork, let excess drip, place back on parchment.
  4. Sprinkle toppings and let set in fridge until firm.
