  • 4 boneless skinless chicken breasts about 6 ounces each
Coating
  • 1/2 cup grated Parmesan cheese the real stuff, not the green can
  • 1/2 cup panko breadcrumbs or regular breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons melted butter
  • 2 tablespoons olive oil
Sauce
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish
  • 1 squeeze lemon juice optional, but brightens everything

Method
 

Prepare the Chicken
  1. Pat each chicken breast dry with paper towels. This helps the crust stick.
Mix the Coating
  1. In another small bowl, stir together the melted butter and olive oil.
Coat the Chicken
  1. Place the chicken on the prepared baking sheet.
Bake the Chicken
    Make the Sauce
    1. Pour in the heavy cream and bring it to a gentle simmer. Let it cook for 2 to 3 minutes, stirring occasionally, until it thickens slightly.
    2. Stir in the remaining 1/2 cup Parmesan, salt, and pepper. Keep stirring until the cheese melts and the sauce is smooth. Turn off the heat.
