Equipment

  • Crockpot
  • Large skillet,

Ingredients

Main Ingredients

  • 3-4 lb Chuck Roast (or other beef roast)
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Beef Broth
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Thyme
  • 1/2 tsp Dried Rosemary (optional)
  • 2 large Carrots, chopped (optional)
  • 2-3 Potatoes, peeled and cubed (optional)

Instructions

  • Sear the Roast: Heat olive oil in a large skillet over medium-high heat. Season the roast generously with salt and pepper. Sear the roast on all sides until browned, about 3-4 minutes per side. This step adds a rich, caramelized flavor.
  • Prepare the Crockpot: Place the chopped onion and minced garlic in the bottom of your crockpot. If you're adding carrots and potatoes, place them on top of the onion and garlic.
  • Add the Roast: Place the seared roast on top of the vegetables in the crockpot.
  • Add the Liquids and Seasonings: Pour in the beef broth and Worcestershire sauce over the roast. Sprinkle with dried thyme and rosemary (if using).
  • Cook on Low: Cover the crockpot and cook on low for 8-10 hours, or until the roast is fork-tender and easily shreds.
  • Shred and Serve: Once cooked, remove the roast from the crockpot and shred it with two forks. Return the shredded beef to the crockpot to soak up the juices. Serve hot and enjoy!

Notes

Substitutions: For a leaner option, you can use a round roast. You can substitute vegetable broth for beef broth. To make the recipe keto, omit the potatoes and carrots or use other low carb vegetables. You can make chicken crockpot recipes using boneless chicken breasts or chicken thighs instead of roast beef.
Pro Tips & Variations: Don't skip the searing step! Adjust cooking times as needed. Thicken gravy with cornstarch. Add a spicy kick with red pepper flakes or hot sauce. Add other vegetables like celery, parsnips, mushrooms or tomatoes. For keto versions, add cauliflower or broccoli but don't overcook them.
