- Preheat your oven to 425 degrees F.
- Spread the frozen fries in a single layer on a large baking sheet. If using fresh potatoes, cut them into uniform sticks, toss them in olive oil, garlic powder, oregano, salt, and pepper, and spread them on the baking sheet.
- Place the baking sheet in the oven and bake for 15 to 20 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fries from the oven. Spoon the marinara sauce evenly over the top, then sprinkle the mozzarella cheese over the sauce. Scatter the pepperoni and olives across the top.
- Return the pan to the oven for another 5 to 7 minutes, until the cheese is fully melted and bubbly.
- Remove the pan from the oven. Sprinkle the grated Parmesan cheese over the top. Add fresh basil or parsley if using. Let the fries cool for a minute or two, then serve immediately with extra marinara sauce and ranch dressing on the side for dipping.
