Cook the Rice
- Heat a large skillet over medium-high heat. Add the olive oil, then the diced onion. Cook for 2 to 3 minutes until translucent and fragrant. Add the ground beef, breaking it up with a wooden spoon. Let it sizzle without stirring too much so you get a nice brown crust.
- Once the beef is mostly cooked through, add the minced garlic, salt, pepper, smoked paprika, and garlic powder. Stir and cook for another minute until the garlic is fragrant.
- While the beef finishes, whisk together the mayonnaise, ketchup, mustard, apple cider vinegar, smoked paprika, and garlic powder in a small bowl. Taste and adjust with salt and pepper.
- Divide the cooked rice among four bowls. Top with a generous handful of chopped romaine lettuce. Spoon the seasoned beef over the lettuce. Arrange the cherry tomatoes, avocado slices, shredded cheese, and pickles around the meat. Drizzle the special sauce over everything, or serve it on the side for dipping.
- Add your favorite extras like crispy bacon bits, sliced jalapeños, or black beans. Everyone can customize their bowl exactly how they like it.
