Ingredients
  

For the Beef
  • 1 pound ground beef or ground turkey, chicken, or plant-based crumbles
  • 1 tablespoon olive oil
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
For the Rice
  • 4 cups cooked rice or quinoa, or cauliflower rice for low carb
For the Toppings
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1/4 cup pickles chopped
Optional Toppings
  • crispy bacon
  • sautéed mushrooms
  • sliced jalapeños
  • black beans
For the Special Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • salt and pepper to taste

Method
 

Cook the Rice
  1. Heat a large skillet over medium-high heat. Add the olive oil, then the diced onion. Cook for 2 to 3 minutes until translucent and fragrant. Add the ground beef, breaking it up with a wooden spoon. Let it sizzle without stirring too much so you get a nice brown crust.
  2. Once the beef is mostly cooked through, add the minced garlic, salt, pepper, smoked paprika, and garlic powder. Stir and cook for another minute until the garlic is fragrant.
  3. While the beef finishes, whisk together the mayonnaise, ketchup, mustard, apple cider vinegar, smoked paprika, and garlic powder in a small bowl. Taste and adjust with salt and pepper.
  4. Divide the cooked rice among four bowls. Top with a generous handful of chopped romaine lettuce. Spoon the seasoned beef over the lettuce. Arrange the cherry tomatoes, avocado slices, shredded cheese, and pickles around the meat. Drizzle the special sauce over everything, or serve it on the side for dipping.
  5. Add your favorite extras like crispy bacon bits, sliced jalapeños, or black beans. Everyone can customize their bowl exactly how they like it.
  6. Serve immediately while the beef is hot and the lettuce is crisp.
