Equipment

  • Slow Cooker
  • skillet,

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 can condensed cream of mushroom soup (10.75 oz, can substitute with cream of chicken or celery)
  • 1 packet dry Italian dressing mix
  • 1/2 cup chicken broth (or water)
  • 1 package frozen mixed vegetables (10 oz, can use fresh, chopped vegetables)
  • salt and pepper to taste

Instructions

  • Prepare the Chicken: Place the chicken breasts in the bottom of your slow cooker.
  • Add the Flavor: Pour the cream of mushroom soup over the chicken.
  • Season Generously: Sprinkle the dry Italian dressing mix evenly over the soup and chicken.
  • Add Liquid: Pour the chicken broth (or water) into the crockpot.
  • Add Veggies: Add the frozen mixed vegetables on top.
  • Season to Taste: Sprinkle salt and pepper over the entire mixture.
  • Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  • Shred the Chicken: Once cooked, shred the chicken directly in the crockpot using two forks.
  • Mix Well: Stir everything together until the shredded chicken is evenly coated with the sauce and vegetables.
  • Serve: Serve immediately and enjoy!

Notes

For a richer flavor, brown the chicken breasts in a skillet before placing them in the crockpot. This adds depth and seals in the juices. To prevent the chicken from drying out, avoid overcooking it – it should be easily shreddable. Don’t be afraid to experiment with different vegetables like broccoli, carrots, or bell peppers!
