- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Whisk together olive oil, minced garlic, zest and juice of one lemon, dried oregano, salt, and black pepper.
- Place the asparagus and cherry tomatoes onto the baking sheet. Drizzle half of the lemon garlic sauce over them. Toss to coat evenly and spread out in a single layer.
- Arrange the salmon fillets on the baking sheet. Pat the salmon dry with a paper towel and brush the remaining lemon garlic sauce over the top.
- Place a lemon slice on top of each salmon fillet.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
- Garnish with fresh parsley and serve immediately.
