Ingredients
  

Salmon Fillets
  • 4 6-ounce salmon fillets, skin on or off
Vegetables
  • 1 lb asparagus, trimmed
  • 1 pint cherry tomatoes
Lemon Garlic Sauce
  • 2 medium lemons
  • 6-8 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. Whisk together olive oil, minced garlic, zest and juice of one lemon, dried oregano, salt, and black pepper.
  3. Place the asparagus and cherry tomatoes onto the baking sheet. Drizzle half of the lemon garlic sauce over them. Toss to coat evenly and spread out in a single layer.
  4. Arrange the salmon fillets on the baking sheet. Pat the salmon dry with a paper towel and brush the remaining lemon garlic sauce over the top.
  5. Place a lemon slice on top of each salmon fillet.
  6. Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  7. Garnish with fresh parsley and serve immediately.
